Chef Takuhiro Hachiya at the wine restaurant Konomichi in Kanoya City, Kagoshima, prepared our sandwich featuring rare pork produced at Fukudome Small Farm. Chef Hachiya says sandwich is an everyday meal meant for casual preparation. Cook the main ingredient, pork chuck roll, over high heat until the surface is browned, and then bake slowly in the oven. This two-step method is the best way to bring out and enhance the flavor of the lean meat. Balance out the rich flavoring of barley miso and chocolate with red cabbage marinade. Finish with crisp wild rocket and wrap in strong, solid bamboo charcoal bread. The moderate fat content makes a flavorful sandwich perfect for Kirishima.
