Balanced Living at it’s Best

When most of us think of New York our immediate thoughts likely conjure up images of the Manhattan skyline, or the hipstars of Brooklyn. We may also think of folks rushing about, honking taxis, sliced Pizza, late night concerts and crowded subways. But travel just 1 to 2 hours North or ‘Upstate’ of the ‘Big Apple’ and you’ll find ‘Real Apples’ growing from ‘real’ trees. You’ll also discover many small farms, run by ‘hip’ young women and sometimes men growing fresh food and selling their high quality produce to small restaurants usually run by ex-New York City chefs seeking fresher pastures and greener air.
Many of the chefs or ex-New Yorkers turned chef’s have moved Upstate in order to use ‘fresher’, ‘healthier’ and ‘less expensive’ ingredients. Common thought would lead us to ask ‘how can these owner-chefs make such aesthetically refined restaurants? serving such awesome food? In such beautiful locations? With such good looking and hard working staff? As Bob Dylan would tell us, “The answer, my friend, is blowin’ in the wind”. There is currently a huge desire to live a lifestyle that blends both city life and non-city time.
New York City is only a two hour train or drive away from Hudson Valley, the center of the Farm to Table movement. The Hudson Valley is spotted with train stations allowing the ‘small towns’ to be easily accessible by New Yorker’s independent on whether or not they have a car. And as we well know at Papersky breathing fresh air, trumping about in nature and eating well prepared and fresh food are some of life’s best gifts.
The Upstate Farm to Table movement is about to explode and it is our hope that it becomes a huge success not just in New York but throughout the world. Because if it does, people will come to greater appreciate nature, food and culture all of the things we love at Papersky. So in ending, leave no crumbs on your plate and travel Upstate!
